Lemon Baked Sole
Ingredients:
Canola oil nonstick cooking spray
4 sole fillets, (6 oz. each)
Vegit and/or Spike and freshly ground black pepper, to taste
1 Tbsp. lemon juice
1 Tbsp. olive oil
1/2 cup chopped parsley and/or fresh mint chopped finely, loosely packed
4 thin slices of lemon
Paprika or lemon pepper, to taste (optional)
Instructions:
Preheat oven to 375 degrees. Spray 9 x 13-inch baking dish. Place fish in baking dish, in one layer. Sprinkle with Vegit and such plus pepper, to taste. In small bowl, mix lemon juice and oil; drizzle over fish. Using back of spoon, spread oil mixture to cover fish completely. Sprinkle with parsley and/or mint chopped finely. Place one lemon slice on top of each piece of fish. Season with paprika or lemon pepper, to taste. Bake 10 minutes.
Makes 4 servings.
